Energy Balls Recipe

Ingredients:

  • 1 cup old-fashioned oats

  • ⅔ cup toasted shredded coconut

  • ½ cup creamy peanut butter

  • ½ cup ground flaxseed

  • ½ cup semi-sweet chocolate chips (or vegan chocolate chips)

  • ⅓ cup honey

  • 1Tbsp. Chia seeds (optional)

  • 1 tsp. Vanilla extract

Directions:

  1. Stir all ingredients together in a large bowl until thoroughly combined.

  2. Cover mixing bowl and chill in the refrigerator for 1-2 hours

  3. Roll into 1-inch balls

  4. Serve: then enjoy immediately! Or refrigerate in a sealed container for up to 1 week. Can be frozen for up to 3 months.
